Does the one Defending Unit gain the effect of this card to ignore flag and banner color once for each attack (8 times); or once for each Bowmen attacking it (4 times); or once for the entire turn (1 time)?

Q: Can I use Mass Shield against Assault? Assault is played instead of a command card so technically I don't play Mass Shield as a reaction to my opponent's Commmand card.
A: No, you may not play a Mass Shield as a reaction to an Assault. Mass Shield can only be played in reaction to a real Command card, not in reaction to a Lore card played in lieu of a Command card.

Q: I play a command card combined with Mists of Terror, which states: “Targets may not ignore flags for any reason”. My opponent then plays Mass Shield, which states: “...targets may ignore one flag...”. Since Mass Shield was played in reaction to Mists of Terror, does it override the Mists and allow targets to ignore one flag?
A: Yes, per the Conflicting rules section on p 52 of the Player’s guide. The second card (Mass Shield) overrides the effect of the first one (Mists of Terror), allowing the targets to ignore one flag. They still MUST take all other flags, however, even if they are Bold, etc...

Q: So if Mass Shield was played in response to an opponent’s Command Card, that opponent could then play Mists of Terror to override the ability of Mass Shield to ignore one flag?
A: No, because Mists of Terror would have been played first, since Mists of Terror is played along with the Command card!
